So my work has a tasty tradition. Every wednesday, we have a caterer bring in a variety of muffins. I’ve had everything from Blueberry Crumb and Apple Cobbler to Pumpkin Chocolate Chip and Bacon Asiago Cheddar.
Of all the muffins, my favorite by far is the Bacon Asiago Cheddar. On that note, here is the recipe:
2 Cups Buttermilk Biscuit Mix
1 Large Egg
1 Cup Milk
2 Tbsp Melted Butter
1/3 Cup Shredded Cheddar
1/3 Cup Shredded Asiago
1/3 Cup Minced Cooked Bacon
Mix wet ingredients (egg, milk, melted butter) together and add to dry (cheddar, asiago, bacon and biscuit mix). Mix thoroughly. Grease muffin pan and fill each 2/3 full. Cook on middle rack of oven at 350 degrees for 15 minutes.
Makes 12 Muffins.
Feel free to experiment. Adding 1/3 Cup Sauteed Scallions turned out nicely
